The blending between the two coffee beans varieties, Arabica and Robusta, aims to combine the best of them, resulting in a complex flavour profile and the texture.
Blending is a technique that optimises the body, aroma and flavours of single-origins in order to create new tastes. The goal of coffee blending is to produce a cup of coffee that is superior to each single component alone.
We slow roast small coffee beans batches to perfection with traditional and revolutionary methods, Briganti is a medium dark slow roasted coffee according with the single coffee beans origin characteristics with the perfect balance between the “sweet spot” and the acidity, of course with a smooth almost velvety crema on top!
Our master roasters are from Puglia South of Italy, they are truly passionate and constantly perfecting their
craft, the experience and knowledge is passed on from generations to generations keeping always an open mind to the new roasting techniques for the perfect balance.
We believe that Arabica & Robusta coffee blend is more stable and consistent in flavour than single origin roasted coffee.

the perfect coffee blend with medium body, chocolaty and sweet taste, intense aroma and aftertaste, compact cream tending to light brown, a true Southern Italian experience admired by even the most demanding palates. A very stable blend trusted from many professional baristas, a very versatile blend ideal for espresso machine, moka pot, french press, filter coffee and aeropress. Perfect for espresso-based cold drinks and espresso-milk-based beverages, such as cappuccino, latte or Flat White.
Our Decaffeinated blend with an intense flavour keeping the same Southern Italian espresso experience thanks to the unique “Demus” technique which also removes the waxes found in the outer layer of the bean, thus delivering a coffee that is both dewaxed and decaffeinated, and therefore easier to digest. Furthermore, Demus’ patented technique guarantees the removal of negative flavours and fungal metabolites which are potentially damaging to human health.
We have a strict process for checking the quality of all the green coffee , Screens are used to measure the size of the beans to make sure they are the agreed size. We buy the high quality green coffee beans both Arabica & Robusta based on the bean size, we only use screen 18/20.
The whole process starts by inserting the green coffee in the silos only after selecting each bean on the densimetric table so as to guarantee the highest quality standard resulting in a large quantity of damaged coffee beans and debris as production waste which it can be recycled for other uses.
The raw coffee beans “debris” can effect the roasting process over burning due the very small size.
Before being roasted, the selected beans are pre-heated and thus better prepared to roasting, a stage that is carried out at low temperatures, in a natural, gradual and slow roasting. Right after the roasting the cooling process, which is rigorously air-based to ensure a superb rendering and a low humidity rate.
At this stage each roasted bean is carefully selected, again, on the densimetric table so as to guarantee the highest quality standard for each roasted bean. As result we have a significant quantity of damaged roasted coffee beans and debris as production waste which it can be recycled for other uses.
We remove the roasted coffee beans “debris” because can effect the taste of the final coffee drinks.
We call our slow roasting method GRS (Gravity Roast Screen).
We also recycle the coffee chaff, the dried skin on a coffee bean, the husk, which comes off during the roasting process. Usually this is an annoyance for coffee roasters as it’s seen as waste that gets everywhere due to it’s fluffy, light texture. Coffee chaff is ideal for composting as it is organic, we collect all of it and then with our briquetting presses we reduce the volume by 90 % ready to be used as compost.

All our green coffee beans suppliers have a long-term partnerships with cooperatives and coffee farms in almost all coffee-originating countries. Every year, our coffee traders visit various partners around the globe to get an idea of the coffee plants, the cultivation and processing methods and the working conditions on site. Fair, transparent and long-term business relationships are the focus of our attention. Only in this way can we create a sustainable and socially responsible value chain which ensure the preservation of biodiversity in the countries where coffee is grown and strengthen coffee farmers and their families.
